Fish Fingers

Hola! :)


How many people like Fish Fingers? I love fish fingers and before I actually started working at a fish shop I would buy a 40 pack a week.. Why I am not bigger than what I am amazes all who know me :3 


But yes, I work at a fish shop and I love it. The people are amazing and I'm surrounded but all this beautiful fresh fish all day. I suppose it wouldn't be a great job if you hate fish but lucky for me I don't. 
So one of the most wonderful perks about my job is that I learn how to cook fish and I work with an amazing chef that tells me all these different wonderful techniques and flavours I can work with. 


Now after work I was given these lovely Garfish fillets to take home and for those of you that don't know what a garfish is I have provided you with a visual representation, 
Your Welcome. The ones we get at the shop are just bigger they the average hand... I would say my hand but I have small hands.. They are about one and a half of my hands :3 


So these gorgeous little fishes were coated in oregano and salt and canola oil for a little bit before being presented to me! I'm so lucky <3 




It is the morning after the little beauties were given, when I found them while foraging around in my kitchen for something to break my fast. There they were wrapped up in a tray with cling film waiting to be cooked up and eaten by  me :3 I must add here that the last time I bought home Garfish my dad cooked them the way you would a thicker fish and they turned out dry and this made me very sad so I didn't give him the chance to touch them this time :D




So I thought they looked small enough to be fish fingers! The only difference is that they contain actual fish and not cardboard :) So I got out some plain flour and some salt and mixed them up on a plate and covered the fish in it. Then I filled a frying pan with about a centimetre of canola oil to shallow pan fry the fingers. I carefully place them in the oil so I don't splash it everywhere and cook until both sides are a golden brown, cooking on high as the fillets are very thin and really don't take long at all before they are cooked. Dry them out on paper towel and thats it your done :) 



They taste so great.. Well great if you like fish.. If you don't like fish thats too bad and all the more for me!  Thats really it for this post as it really is such a simple thing to whip up and good to cook at anytime for a like snack! Just be sure to remember whenever cooking with fish to cook it either same day or the day after if your just keeping it in the fridge and not freezing it.

Rainbow Cupcakes

Hey there food lovers :)


Today I did something special with some of my very good friends! We made rainbow cupcakes today!! I love making cake with or for people. Just sharing food in general really is a wonderful thing. Its what I love most about cooking, even though I don't eat a lot of things especially cakes and sugary stuff. I love that when I do make these things it makes a lot of people really happy :) 





I've used a packet mix but you can use a Vanilla Cake recipe so I have provided one for you :) When a cake is this easy to make you definitely don't need a cake mix it just saves some time, this vanilla cake is simple and easy to remember so you can whip it up really quickly. And in today's case we have decided to make Rainbow muffins so you'll need a lot of bowls or in-between baking separate colours you can wash just the one bowl :)
              • 2 cups sugar, 4 eggs, 2-1/2 cups all-purpose flour,1 cup milk, 3/4 cup vegetable oil, 2-1/4 teaspoons baking powder, 1 teaspoon vanilla essence, Food colourings.
Preheat oven to 180 degrees C. Grease the muffin tray.

In a large mixing bowl beat sugar and eggs together until slightly thickened, Add flour, milk, oil, baking powder and vanilla and beat just until the batter is smooth and creamy.
 
Pour batter into 6 different bowls evenly and add different food colours until you get the colour you want in each bowl. 

Put 2 teaspoons of a colour in each muffin area and bake for 10 mins (you should be able to touch the tops of them and have them spring back into place nicely :)) 

Do this until you run out of cake mix.

Use your artistic judgement to cut the coloured muffins into thin slices. It really differs from person to person I usually cut them into thirds or cut the top just where it starts to round and then wherever I feel like it :)
To make icing you mix milk and vanilla essence and icing sugar. No measurements just until it is thick. You need a lot of it as it goes between each slice of coloured cake! 

Now here's the creative part. You get this Fondant Icing. I don't know how to make it properly but you can get it at any supermarket. Roll it out till it's about 2mm  and cover each cake to make them look pretty. You can make them look like what ever you want. Sky's the limit. In our case we did Dramatic masks, Love hearts, Flowers, Bows, a Sunset with clouds, Holly, a Pokeball and Julia Gillard.

Everyone who had some today really liked them so I'm sure you will too. It takes a while to make so these are perfect when you have some friends over to help you out :) I did and I had a fabulous day!

Fried Rice

Today I felt like it had been too long since I last had Chinese food, so I made fried rice for breakfast.. and then lunch... :)

I love Fried Rice. Love. It. I have all the chinese food restaurants in my area ranked in order of how good their fried rice is. So I made it my business to learn how to make [in my opinion] the best fried rice. You can disagree with me if you wish but I don't really care :) This makes enough for either 2 people or in my case [seeing as I'm forever alone] 2 meals [breakfast and lunch] :3

Now This is perhaps the easiest recipe ever, once you learn you can't forget it! The Basics of the recipe are rice, soy sauce, bacon and egg. You can add anything/everything you like (peas, prawns, chicken, pork, beef, shallots) but in my case thats what I add.. Bacon may not be a necessity to you but in my life and my cooking it it... I'm a little addicted to bacon.. there is nothing bad about bacon. Ever. 


So you want to start with boiled rice.. any rice is fine.. you can boil it yourself or get the packet ones its up to you and how much time you have. 



If your boiling rice then wait till the water is boiling then add the rice stir it around and after about 3 mins try some if its not hard all the way through its done.. drain the rice and then dry it out on a paper towel.. get all the residual water out of it or it wont be fried rice it will be sticky rice but then you could want that and who am I to judge? 



If you have the microwave rice follow the directions on the back and thats able it. They wont be any extra water so you'll be sweet :)


Now while your rice is cooking cut up everything you want to add to the rice. I just did bacon and an egg as it was breakfast time and really thats all I ever want in my rice at anytime. 



Fry up the bacon bits on a high heat and then push them to the side of the pan. Crack open the egg and fry it up too cooking it as you would cook scrabbled eggs, continuously moving it around and breaking it apart. 


When it's not running and all broken up stir in the bacon and add the rice. Stir that up till its nice and mixed together then add about 2-3 tablespoons of soy sauce [really depends on how much you like soy sauce] and 3 tablespoons of water stir it up till its all mixed and sizzling and thats it your done :)


I enjoyed eating this before I went off to work while watching Cake Boss which gave me some inspiration as to my next post so thats going to be a fun one :P


Anyway all this typing is making me hungry so I think I'll go deep fry some baby prawns in beer batter or make some cheesy bread also its time I watched Game of Thrones :D
